Stuffed Beef Tenderloin

Stuffed Beef Tenderloin

Marinade:
1 cup Oil
2 Tbsp. Worcestershire Sauce
1 tsp. Oregano, Basil, Thyme
1 tsp. Garlic Salt
1 tsp. Salt
½ tsp. pepper

Filling:
Handful Bacon
1/2 of an Onion, chopped
Cheddar Cheese, shredded
1 tin Mushrooms
4 Tbsp. Miracle Whip
4 Tbsp. Cream of Mushroom Soup

Marinade tenderloin for 4 hours. Slice in half lengthwise and stuff with filling.  Wrap bacon around the outside and tie with a string to hold it together.  Bake for 1.5 hours or until 170 (let stand 10-15 minutes and remove string).  I baked mine in my 9x9 Pampered Chef Pan.

You can't go wrong with the filling amounts, just do whatever you'd like. :)

Pumpkin Whoopie Pies

The kids were having these for an afternoon-school-snack and C says, "Mommy, you make good Whoopie Cushions!!"  hehe!!
Pumpkin Whoopie Pies

2 cups Flour
1 tsp. Baking Powder
1 tsp. Baking Soda
1 tsp. Cinnamon
1/2 tsp. Ginger
1/2 tsp. Salt
1/2 cup Butter, softened
1 1/4 cup Sugar
2 large Eggs, slightly beaten
1 cup Pumpkin
1 tsp. Vanilla

Filling:
4 ounces cream cheese at room temp
6 tbsp butter, softened
1/2 tsp vanilla
1 1/2 cup powdered sugar (I used a little more)

Preheat oven to 350. Line baking pans with parchment.  Spray parchment with cooking spray.

Combine flour, baking powder, baking soda, cinnamon, ginger and salt. Beat butter and sugar in a large bowl on medium speed. Add eggs one at a time, beating well after each. Add pumpkin and vanilla. Stir in flour mixture until combined. Drop by teaspoons (I used a tablespoon, heaping).
Bake 10-13 minutes or until springy. Cool on baking sheets 5 minutes.

Filling: Beat cream cheese, butter, and vanilla. Gradually add powdered sugar until light and fluffy.

Pumpkin Muffins

Pumpkin Chocolate Chip Muffins
4 Eggs
2 cups Sugar
1 ½ cups Oil
1 ¾ cups Pumpkin
3 cups Flour
1 Tbsp. Cinnamon
2 tsp. Baking Powder
2 tsp. Baking Soda
1 tsp. Salt
2 cups Chocolate Chips

Beat eggs slightly. Add sugar, oil, and pumpkin. Beat thoroughly. Add dry ingredients and mix until smooth. Stir in chocolate chips. Fill greased muffin tins ¾ full. Bake at 350oF for 15 20 minutes.

Bread Pudding

Here's a pan of Bread pudding that I just pulled out the oven!  I was gonna throw out some dried-out buns, but decided to make this instead! ...wish I could eat a piece, guilt-free! ;)


Bread Pudding

2 ½ cups Bread, cubed
2 ½ cups Milk, scalded
3 Tbsp. Margarine
2 Eggs
½ cup Sugar
¼ tsp. Salt
1 tsp. Cinnamon
½ tsp. Vanilla
Raisins, optional

Place bread cubes into greased 9 x 9 pan. Beat eggs. Add sugar, salt and cinnamon. Heat milk and margarine, until hot. Add milk and margarine to egg and sugar mixture. Add vanilla and pour over bread cubes. Sprinkle with raisins, optional. Bake at 350oF for 45 50 minutes.

** I usually make a 9 x 13 and then I make 2 recipes.

Lazy Cabbage Rolls

This is such an easy recipe and it tastes SOOO yummy!!  A comfort food. :)

Lazy Cabbage Rolls

1 Onion, chopped
2 lbs. Hamburger
Salt & Pepper, to taste
Dash of Garlic Powder
1 cup Rice (or more), cooked
Cabbage

Fry onion in oil and add hamburger and cook until browned.  Add salt, pepper and garlic powder.  Add rice to hamburger and mix. Cut up cabbage and put a layer on the bottom of a casserole dish. Add the meat and rice mixture and then cover with another layer of cabbage. Mix 2 cans of tomato soup with 3/4 cup cereal cream and pour over cabbage. Bake at 350 for about 1.5 hours. Tastes even better if made the day before and then reheated.

Oreo Cookie Salad

This salad is sooo easy to make!!... and delicious too!

Oreo Cookie Salad

1 pkg. Instant Vanilla Pudding
2 cups Milk (I use Almond Milk)
1 container Cool Whip
1 tin crushed Pineapples, drained
1 tin Mandarin Oranges, drained
½ pkg. Oreo Cookies, broken

Mix pudding and milk together. Add rest of ingredients and mix well.

Milk Chocolate Oatmeal Cookies

These cookies are so yummy!! :)

¾ cup Butter
¾ cup Brown Sugar
1/3 cup White Sugar
1 Egg
1 ½ tsp. Vanilla
2 Tbsp. Milk
1 ¼ cup Flour
½ tsp. Baking Powder
½ tsp. Baking Soda
½ tsp. Cinnamon
¼ tsp. Salt
1 cup Oatmeal
1 ¾ cup Chocolate Chips

Bake at 350 for 9.5 minutes.  I usually make 3 recipes when I make these :)

Ultimate Chocolate Chip Cookie n’ Oreo Fudge Brownie Bar

Ultimate Chocolate Chip Cookie n’ Oreo Fudge Brownie Bar

Cookie Layer:
1 cup Butter, softened
1 cup Sugar
3/4 cup Brown Sugar
2 Eggs
1 Tbsp. Vanilla
2 1/2 cups Flour
1 tsp. Baking Soda
1 tsp. Salt
2 cups Milk Chocolate Chips

1 pkg Double Stuffed Oreos (I used regular, because that's what I had at home)

Brownie Layer:
2 cups Flour
2 cups Sugar
½ tsp. Salt
½ cup Butter, or less
1 cup Water
½ cup Crisco or Oil
2 Tbsp. Cocoa
2 Eggs, beaten
1 tsp. Baking Soda
½ cup Sour Milk (Milk with Vinegar – 1 ½ Tbsp. Vinegar)
1 tsp. Vanilla

1/4 cup Hot Fudge Sauce

Cookie Layer: Cream the butter and both sugars in a large bowl with an electric mixer on medium speed for 3-5 minutes. Add the eggs and vanilla and mix well to thoroughly combine. Add the flour, baking soda and salt, Mix until the flour is just combined. Stir in chocolate chips. Spread the cookie dough in the bottom of a 9×13 baking dish that’s been lined with wax paper and sprayed with cooking spray.

Top with a layer of Oreos.

Brownie Layer: Mix flour, sugar and salt in a large bowl. In a pot, put butter, water, oil and cocoa. Bring to a boil. Pour the mixture over flour mixture and mix well. In a separate bowl mix: eggs, baking soda, sour milk and vanilla. Add this mixture to the rest. Pour the brownie batter over the cookie dough and Oreos. Bake at 350 degrees F for 45-55 minutes.

Serve warm with ice cream and hot fudge sauce drizzled over the cake!

Next time I make this recipe, I think I would 1/2 the cookie layer. I found it took extra long to bake because it was SOOO thick. The edges also got dark before the centre was completely done. Also, I wouldn't use a glass pan next time, as it tends to bake too quickly on the bottom and it gave the cake a bit of a hard crust. So, for our company yesterday, I served all the centre pieces that were done nicely :) We really enjoyed this dessert and I would DEFINITELY make it again!!

Spaghetti/Pizza Sauce

Spaghetti/Pizza Sauce

12 cups Tomatoes
8 medium Onions
2 Green Peppers
3 – 4 Jalapenos, optional
1 Tbsp. (or more) Garlic Powder
¾ cup Oil
1 cup Sugar
¼ cup Salt
6 Bay Leaves
4 – 8 oz. tins Tomato Paste
2 Tbsp. Oregano
2 Tbsp. Basil
2 Tbsp. Parsley Flakes
1 Tbsp. Chili Powder

Put veggies through blender. Add remaining ingredients and cook for 1 hour. Put into jars and seal.

Lasagna


Lasagna

Meat Mixture:
2 Tbsp. Oil
1 Large Onion
2 lbs. Hamburger
1 tin mushrooms, drained
1 - 14 oz. tin Tomato Sauce
2 – 5 ½ oz. tin Tomato Paste
1 tsp. Salt
2 tsp. Oregano
½ cup Water

Cottage Cheese mixture:
1 – 500 ml Cream Cottage Cheese
1 Egg
½ tsp. Salt

14 Lasagna Noodles

1 lb. Mozzarella Cheese, shredded

Meat mixture: Fry onions in oil until tender. Add hamburger and brown. Add rest of ingredients and simmer on low for 15 minutes. (often I add 2 pints of my homemade canned spaghetti sauce http://tasteofhomemade.blogspot.com/2011/06/spaghettipizza-sauce.html after frying the onions and hamburger).

Mix together ingredients for Cottage Cheese mixture. Mix well.

Boil Lasagna Noodles according to package instructions.

Spread ½ meat mixture in 9 x 13 pan. Cover with 7 Lasagna noodles. Spread Cottage Cheese mixture over noodles. Cover with remaining meat mixture. Cover with rest of Lasagna noodles. Cover with Mozzarella Cheese. Bake at 350F for ½ hour or until heated through.

Taco Lasagna


Taco Lasagna

2 lbs. Hamburger
2 packages Taco Seasoning Mix
4 cloves Garlic, minced
½ tsp. Cayenne Pepper
1 Tbsp. Chili Powder
½ cup Water
18 - 6 inch Corn Tortillas (or Flour)
1 – 24 oz. jar Salsa
1 cup Green Onion, sliced
1 – 16 oz. container Sour Cream
3 cups Cheddar Cheese, shredded

Brown hamburger. Drain, then seasoning with taco seasoning, garlic, cayenne pepper, chili powder and water. Simmer for 10 minutes. Grease the bottom of a 9x13 baking dish. Place 6 tortillas into the dish. Spread 1/3 of the salsa on top of the tortillas. Spread ½ of the meat mixture evenly over the salsa. Sprinkle with ½ of the onions. Drop ½ of the sour cream randomly over the green onions. Top with 1 cup cheese. Repeat layers. Top with 6 tortillas, spread with remaining salsa and sprinkle with remaining cheese. Bake at 375F for 30 – 45 minutes or until cheese is melted.

Soft Sour Cream Cookies

Christmas in June??? Wow, I guess I am really behind on blogging my recipes!! I found some recipes from Christmas baking that I hadn't blogged yet... ;)



Soft Sour Cream Cookies

1 ½ cups Margarine
2 cups Sugar
4 Eggs
2 cups Sour Cream
6 cups Flour
4 tsp. Baking Powder
2 tsp. Baking Soda

Mix ingredients in the above order. Chill dough. Roll dough and cut with cookie cutters. Bake at 350oF for 12 minutes or less. Ice cookies with vanilla icing and decorate as desired. Makes 6 – 7 dozen cookies.

Kommst Borscht (Cabbage Soup)



Kommst Borscht (Cabbage Soup)

Stock Pot (¾ full of Water)
3 – 4 Beef Soup Bones
3 large Onions, chopped
2 cups fresh or frozen Dill
1 ½ - 2 cups fresh or frozen Parsley
3 Whole Star Aniseed
4 – 5 Bay Leaves
1 tsp. Whole Black Pepper Kernels
1 cup Chicken Soup Base
3 Beef Bouillon Cubes in 1 cup Water
4 tins Tomato Soup
Salt, to taste
2 heads Cabbage, chopped
1 cup Pot Barley, optional

Cook soup bones in water for 2 hours. Add onions, dill and parsley. Add spice ball containing: star aniseed, bay leaves, and black pepper. Cook for another ½ hour. Add chicken soup base, bouillon cubes with water, tomato soup and salt and simmer for 15 minutes. Add cabbage and pot barley and cook for 1 hour or more. Stir regularly.

Honey Garlic Chicken

4 Chicken Breasts
2 ¼ cups Brown Sugar (I do find this to be too sweet for me, so you could do less and taste it and see if you'd like it sweeter)
3-4 Tbsp. Cornstarch, heaping
2 ¼ cups Water
3 Tbsp. Soya Sauce
3 tsp. Honey (or more)
1 tsp. Garlic Powder

Cut up and sauté chicken. In a pan; mix sugar and cornstarch, add water and soya sauce. Add honey and garlic powder. Cook until thick and then add cooked chicken and simmer for about 20 minutes. Serve over rice.

Easy Chicken Pot Pie

This is a great casserole for using up leftover chicken or turkey! (sorry, this picture isn't the greatest...)



Chicken Pot Pie

2 cups Mixed Vegetables
1 Onion, prefried
1 – 10 oz. Cream of Mushroom Soup or Cream of Chicken
2 ½ cups cooked Chicken or Turkey, cubed
2 boxes Stove Top Stuffing

In a casserole dish; Mix together vegetables, onion, soup and chicken of turkey. Make stuffing according to package instructions and spread over chicken mixture. Bake at 350oF for 30 – 45 minutes or until heating through and bubbling on the top.

Mexican Chicken

I tried a new recipe today. It was quite tasty!! :) If any of you have the Bethel Bergthaler Church cookbook, it's in there. I love that cookbook! :)

Mexican Chicken

4 Chicken Breasts
2 cups crushed Corn Tortilla Chips, crushed (I put the chips in the blender) Also, the chips I used were quite salty, next time I would look for lightly-salted instead.
1 tsp. Cumin
1 tsp. Chili Powder
1 Egg

Mix together chips, cumin and chili powder. Put in shallow dish. Dip chicken pieces in beaten egg, then coat in chip mixture. Bake at 350F for about 1 hour, or until done.

Blend. Add 3 ice cubes; blend until smooth.

Skor Trifle

This is one of those recipes that you can't go wrong with...

Skor Trifle

1 Chocolate Cake (mix and bake according to package directions)
Chocolate Pudding (1 pkg. mixed according to package directions)
Butterscotch Pudding (1 pkg. mixed according to package directions)
3 cups Chocolate Chips
1 pkg. Skor Bits
3 cups Whipping Cream (before whipping) and then add sugar and vanilla as you would to make
whipped topping

Layers:
1/2 the Chocolate cake
1/2 the Chocolate pudding
1/2 the Butterscotch pudding
1/2 the Whipping Cream
1/2 the Chocolate Chips
1/2 the Skor Bits

Repeat layers.... Enjoy!! :)

Maple Glaze Cinnamon Buns

Not many words for these, other than DELICIOUS!! :)
Maple Glaze Cinnamon Buns

Dough:
1/2 cup Water
2 (8 g) packages active dry Yeast (4 tsp)
2 Tbsp. Sugar
1 (3 1/2 ounce - 2 cup) pkg. Vanilla instant pudding mix
1/2 cup Margarine, melted
2 Eggs
1 tsp. Salt
6 cups Flour

Filling:
1/2 cup Margarine
2 cups Brown Sugar
4 tsp. Cinnamon

Topping:
1 cup Brown Sugar
1 cup Maple Syrup
2 1/2 cups Cream
1 tsp. Vanilla
2 Tbsp. Cornstarch

In a bowl combine water, yeast and sugar. Stir until dissolved. Set aside. In large bowl, take pudding mix and prepare according to package directions. Add margarine, eggs and salt. Mix well. Then add yeast mixture. Blend. Gradually add flour; knead until smooth. Place in a greased bowl. Cover and let rise until doubled. Punch down dough and let rise again. Then roll out on floured board to 34 x 21" size. Take 1/2 cup soft margarine and spread over surface. In bowl, mix 2 cups brown sugar and 4 teaspoons cinnamon. Sprinkle over top. Roll up very tightly. With knife, put a notch every 2". Cut with thread or knife. Place on lightly greased cookie sheet 2" apart. Take hand and lightly press down on each roll. Cover and let rise until double again. Bake at 350 15-20 minutes. Remove when they start to turn golden. DON'T OVER BAKE.

Sauce: Mix all ingredients together in medium pot. Cook over medium heat, stirring constantly until it bubbles and get thick. Pour over cinnamon buns and ENJOY!!

Steak Marinade

Steak Marinade

1 ¾ cup Bulls Eye BBQ Sauce
3 Tbsp. Soya Sauce
1 Tbsp. Worcestershire Sauce
1 Tbsp. Montreal Steak Rub
1 Tbsp. Morton’s Salt
1 ½ Tbsp. Red Wine Vinegar
¼ cup Lemon Juice
2 Tbsp. Garlic

Mix ingredients together. Marinade steaks for 4 days and BBQ.

Steak Quesadilas

We had these for supper yesterday! This is a great way to use up those leftover steaks. They were super good!! :)...

Steak Quesadilas
1/2 large Red Pepper, cut into pieces
1 Onion, cut into pieces
6-7 leftover Steaks, cut into pieces (http://tasteofhomemade.blogspot.com/2011/04/steak-marinade.html)
Cheese (Mozzarella or Cheddar)
Flour Tortillas

Fry pepper and onion until soft. In a bowl, mix together Steak pieces, Onion, Peppers and cheese. In a greased skillet, place 1 tortilla shell and spread chicken mixture over ½ of the shell. Fold over and fry for a few minutes, until bottom side is browned. Flip over and fry other side until browned. Cut in half. Serve with Salsa.

Cheesy Apple Melt

I'm pleased to announce a new category on my blog (Cooking for Kids). My girls each got a Company's Coming Kids' Cookbook for their birthday. They love helping me in the kitchen and can't wait to try out a bunch of new recipes! :) H got a camera for Christmas, so the recipes in the "Cooking for Kids" will be featured using pictures taken by her. :)
Cheesy Apple Melt

1 slice Bread
8 thin Apple slices
2 Cheddar Cheese Slices (we used Mozzarella, because that's what we had at home)

Toast the bread. Place it on the plate. Arrange the apple slices on the toast. Place the cheese on top. Microwave, uncovered on high for about 30 seconds until the cheese is melted. Serves 1.

Rainbow Cupcakes

I found the coolest idea on the net for making rainbow cupcakes. It took a long time to make, but it's really easy!
Mix a white cake mix as you would normally. Seperate batter evenly into 6 bowls. Add food coloring to each bowl to make Purple (blue&red), Blue, Green (yellow&blue), Yellow, Orange (yellow&red) and Pink. You can add whatever amount you'd like, however bright you like the colors to be. :)
Fill cupcake holders about 2/3 full. I filled them WAY too full and they went over into my oven and I had to cut some of the the tops off partially. So, learn from my mistakes!! :)
This is what the inside looked like. I'm thinking if I would've filled them less, it would be more of a definite layering...
I mixed together whipping cream (2 cups) and vanilla pudding (1 pkg) and added food coloring once mixed.
I borrowed this cupcake holder from my sister, and it worked really nicely....

Apple Streusel Muffins

I made these for our Women's Bible Study wind-up on Tuesday. Apple Streusel Muffins

2 cups Flour
1 cup Sugar
1 Tbsp. Baking Powder
1 ¼ tsp. Cinnamon
½ tsp. Salt
½ tsp. Baking Soda
2 large Eggs, beaten
1 cup Sour Cream
¼ cup Margarine, melted
1 cup Apples, unpeeled & finely diced

Streusel Topping:
¼ cup Sugar
3 Tbsp. Flour
¼ tsp. Cinnamon
2 Tbsp. Margarine

In a large bowl, stir together flour, sugar, baking powder, cinnamon, salt and baking soda. Set aside. In small bowl, beat eggs, sour cream and margarine. Add all at once to dry ingredients, along with apples. Stir just until moistened. Fill lined muffin tins 2/3 full. Combine topping ingredients. Sprinkle on top. Bake at 375F for 15 – 20 minutes. Makes approximately 18 muffins.

Spelt Bread

This bread is really good, but alot denser than white bread is. My kids & I really enjoyed it, but Garry didn't like it. He LOVES white bread!! ;) Ready for the oven...
All baked and ready to slice...
All sliced and ready to eat, yummy!!...

Spelt Bread

1 1/4 cup Water
1 1/2 tsp. Yeast
2 Tbsp. Oil
2 Tbsp. Honey
4 cups whole Spelt Flour
1 1/2 tsp. Salt

Mix all ingredients in Braun machine in order given. Kneed for 9 minutes. Let rise for 1.5 hours. Roll out dough to width of pan and then roll-up and place into pan. Let rise in pan for another 1.5 hours. Brush top of loaf with an egg mixed with a little bit of water. Bake at 350 for 25-30 minutes. Makes 1 loaf.

Hot Broccoli Dip

Wow, it looks like I haven't updated my blog for a very long time!! I do have a bunch of recipes that I do need to post. I have been doing a "Candida diet" since February, so I have tried to stay away from even looking at any food containing dairy, yeast or flour. (which is pretty much everything!!) :) But, I do still cook regularly for my family, but haven't tried as many new and exciting recipes lately... :( I started putting the cheese on top and then quickly took a picture before finishing, so you could see what the dip itself looks like... Hot Broccoli Dip

1 cup Broccoli, chopped
2 Tbsp. Onion, chopped
2 Tbsp. Red Pepper, chopped
¼ cup Parmesan Cheese
1 clove Garlic, pressed
1 cup Cheddar Cheese, shredded
½ cup Sour Cream
½ cup Miracle Whip
1/8 tsp. Pepper

Mix all ingredients and pour into casserole dish. Bake at 375oF for 20 – 25 minutes or until heated through. Sprinkle extra cheese over top (if you'd like). Serve with baked pita chips, chips, crackers or vegetables. Enjoy! :)

Sweet and Sour Sausage

Sweet ‘n’ Sour Sausage
2 Tbsp. Soya Sauce
½ cup Ketchup
1 tin Tomato Soup
1 cup Brown Sugar
4 Tbsp. Vinegar
4 Tbsp. Cornstarch
2 cups Water
1 tin Pineapple Tidbits, optional

1 link Farmer Sausage

Slice farmer sausage into pieces and put into casserole dish. Bring first 5 ingredients to boil. Mix cornstarch and water and add mixture to boiling ingredients. Stir until glossy, add pineapple tidbits. Pour sauce over sausage (unbaked). Bake at 350F for 1 hour. Serve with rice.

Smartie Cookies

C helped me bake cookies yesterday. His job was putting the M&M's onto each cookie. He all of a sudden said, with a big smile, "Hey, I touched all the cookies, so I get to eat them ALL." :)

I used M&M's instead of Smarties (thanks Marlena for the recipe ;)) Smartie Cookies

1 cup margarine
1 1/2 cups brown sugar
3/4 cup white sugar
1 tsp. vanilla
3 eggs
3 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1 1/2 cups smarties ( I use M&M's, either mini or regular size)

Cream togethers first 5 ingredients. Add flour, soda and salt. Mix well. Add smarites. Bake at 350 for 8 -9 minutes.

Cinnamon Buns

This is the same dough I use to make buns, so sometimes when I make buns I'll use some of the dough and make one 9x13 of cinnamon buns. :)
I often have trouble with the middle of the cinnamon buns not being baked all the way, so I tried baking them on a cookie sheet. That seemed to work better as far as being more well-done, but I added too much sauce and made a mess of my oven... and the floor... and the counter. So, next time I'll just add a little less sauce or a deeper pan. ;)
Cinnamon Buns
Dough:
4 ½ cups hot Water
1 cup Oil
3 tsp. Salt, heaping
1/3 cup Sugar, rounded
2 Eggs
2 ½ Tbsp. Instant Yeast, rounded
Flour

Filling:
2 – 3 cups Margarine, melted
4 cups Brown Sugar & 2 cups White Sugar
Cinnamon

Sauce:
2 cups Cream
2 cups Brown Sugar
2 cups Corn Syrup
4 Tbsp. Margarine

Mix together water, oil, salt, sugar and eggs. Add 2 cups flour and yeast and mix. Add flour (a cup at a time) to make nice dough (so that they dough is not too hard, but not sticky either). Let rise in dough bowl until double in size (about 1 hour). Roll dough out on floured counter (do ½ at a time). Spread ½ of the margarine onto dough. Sprinkle ½ of the sugar mixture over top. Sprinkle generously with cinnamon. Roll up and slice into 1 – 1 ¼" slices. Place into greased 9 x 13 pans. Let rise about 1 hour. Bake at 350oF for about 15 – 20 minutes or until golden brown. Cook ingredients for the sauce and cool slightly before using. Pour sauce over top of cinnamon buns, just before done and bake for 2-3 minutes longer.

Hamburgers, Meatballs, Meat Loaf

This recipe can be used for hamburgers, meatballs or meatloaf.
Hamburgers/Meatballs/Meatloaf

2 lbs. Hamburger
½ pkg. Onion Soup Mix
2 Dashes Pepper
¾ tsp. Salt
1 Egg
½ - ¾ cup Bread Crumbs or Oatmeal
¼ cup Water
1 small Onion
¼ tsp. Worcestershire Sauce
Mix together all ingredients.

For hamburgers: roll into balls and flatten into hamburger patties. Bake at 350oF for 15 minutes or BBQ.

Meatballs: roll into balls. Bake at 350oF for 15 minutes.
Meatloaf: Spray loaf pan with Pam. Place meat mixture in pan and spread ¾ cup (or more) ketchup on top. Bake at 350oF for 1 - 1 ½ hour or more until done.

Taco Soup

Yummy! I could eat this soup once a week in the winter!
Taco Soup
2 lbs. Hamburger
½ cup Onion, chopped
28 oz. tin Whole Tomatoes, with juice (I use 2 cups chopped Tomatoes (frozen, from my garden)
1 tin Pork ‘n’ Beans, undrained
1 tin Corn, undrained
2 tins Tomato Soup
1 pkg. Taco Seasoning (or 1 1/2 Tbsp. Homemade Taco Seasoning)
1 - 2 cups Water (optional, depending on how liquidy you want your soup)
Salt & Pepper, to taste
1 cup Cheddar Cheese, grated

Brown hamburger with onions. Drain fat. Add remaining ingredients, except cheese. Simmer for 15 minutes. Ladle into bowls. Top with grated cheese; serve. Serves 6-8

Chicken Quesadillas



These are a really quick supper and nice if you need to use up some leftover chicken or chicken strips...

Chicken Quesadillas
5 Chicken Breasts, cooked & cubed or Chicken Fingers, baked (I usually do the chicken fingers)
1 large Onion
1 Green Pepper
1 Red Pepper
1 Tomato
2 cups (or more) Cheddar or Mozzarella Cheese, grated
Tortilla Shells

Bake chicken. In a bowl, mix together Chicken, onion, Peppers, Tomato and cheese. In a greased skillet, place 1 tortilla shell and spread chicken mixture over ½ of the shell. Fold over and fry for a few minutes, until bottom side is browned. Flip over and fry other side until browned. Cut into 3rd’s. Serve with Salsa and/or Ranch Dressing.

Lazy Napolean Torte

This is dessert is so yummy, and you'd never guess it was made with soda crackers!!

Lazy Napolean Torte

Unsalted Soda Crackers (about 3 packages)
4 eggs
2 cup sugar
6 cups milk
2 tablespoon butter
2 teaspoon vanilla
2 package of Dr. Oetker's Vanilla Pudding
Whipped Cream (Real is always the best ;))

Beat eggs with a wooden spoon, add the sugar mixed with the pudding mix and beat again.
Stir in the milk and cook over medium heat til the pudding thickens. It can also be done in the microwave. Take off the heat and stir in the butter and vanilla. Put a bit of pudding on the bottom of a 9x13 pan. Now begin layering the crackers with the pudding using enough pudding to cover the crackers. It should give you about 4 layers. Top the last layer off with some whipped cream or whipped topping. Let sit in the refrigerator over night or several hours so the pudding soaks through the crackers and softens them.

Bacon Omelette Roll with Salsa

I have to confess, I took this picture off of the website where I got the recipe. ;) My picture didn't turn out well. But this is really what it looks like when it's done! :)

Bacon Omelette Roll with Salsa

8 eggs
1 cup milk
1/3 cup flour
1 red pepper, finely chopped
4 slices bacon, cooked, crumbled
3 green onions, finely chopped
1 tsp. dried oregano leaves, crushed
1 cup Kraft Mozza-Cheddar Shredded Cheese
1 cup salsa, warmed

Preheat oven to 350ºF. Line 15x10x1-inch pan with parchment paper, with ends extending over shortest sides of pan. Spray with cooking spray. Beat eggs, milk and flour in large bowl with whisk until well blended. Stir in next 4 ingredients; pour into prepared pan. Bake for 14 to 16 min. or until edges are almost set. Top with cheese; bake 2 min. or until melted. Roll-up omelette immediately, starting at one short end and peeling off paper as omelette is rolled. Place on platter; cut into slices. Serve with salsa.
