Caramel Party Mix

Just the cereal, ready for the syrup...
All gooey, ready to eat...
Caramel Party Mix

1 cup Brown Sugar, packed
½ cup Butter or Margarine
1/3 cup Corn Syrup

10 cups Assorted Cereals (Example: 4 cups Life, 3 cups Corn Bran Squares, 3 cups Crispix)
Bring first 3 ingredients to boil for 1 minute. Pour over assorted cereals. Put into cookie sheet and let dry. Store in sealed container.

Colored Popcorn

Heidi wanted to bring something to school for their class Christmas party. So, she helped me make this yummy treat. My girls are really helpful in the kitchen. I hope their love for cooking increases. It is fun to cook and bake with them!

Colored Popcorn

2 cups Sugar
½ cup Water
1 Tbsp. Butter
1 tsp. Food Coloring
¼ tsp. Salt
1 cup Popcorn, popped

Mix all ingredients, except popcorn, in a pot. Boil for 3 minutes. Pour over popped popcorn. Mix and let sit until dry.

2 tsp. Baking Powder
¼ tsp. Salt
1 Tbsp. Butter or Margarine
1/3 – ½ cup Milk or Water

Sift flour, baking powder and salt together (I don't ever sift my flour). Cut butter or margarine into dry ingredients. Texture should resemble cornmeal. Stir in the milk or water to make a sticky dough. Drop from a spoon on top of stew. Cover and simmer on low for 10 minutes without lifting the lid.

Beef Stew (Slow Cooker)

1.5 lbs Stewing Beef
Garlic Powder

3 potatoes, peeled & cubed
1/2 large Onion, diced
2 cups Corn, undrained
2 cups Carrots, undrained
1 tin Mushrooms, undrained
2 cups Water

1/2 tsp. Salt
4 Tbsp. Bisto (heaping)
1 Tbsp. Chicken Soup Base (heaping)
2 dashes Worchestershire Sauce

Thaw beef and coat in flour, salt, pepper and garlic powder mixture (whatever amounts you want). Put in slow cooker and cook on high for 2 hours. Add potatoes - water and cook on high for another 2 hours. Add salt - worchestershire sauce and cook for one more hour on medium.

Mix ingredients for dumplings ( and drop by tablespoon full into slow cooker. Replace lid and cook for 1 hour on high or until dumplings are done.

Flour Tortilla Shells
Butter, melted
Cinnamon/Sugar Mixture

Brush tortilla shells with butter (just enough to coat) and then sprinkle with cinnamon/sugar mixture. Cut into 8 pieces with pizza cutter. Bake at 350 until golden brown and crispy.

Fruit Salsa

1 container Strawberries
2 Kiwis, cut into pieces
1 Banana, sliced
1 tin Pineapples, drained
1 Apple, cut into pieces
1 small tin Peaches, drained & cut into pieces
2-3 Tbsp. Strawberry Jam

Mix together all fruit and add strawberry jam. You can do however much fruit you want and jam as well. This is one of those "Granny cooking" recipes. :)


When I make Enchiladas, I usually make 2 recipes and put some into the freezer. It is so handy, and also makes a great meal for a sick friend, a new mom or surprise company. :)


1 package Flour Tortillas (Sunny Day's are the best)

2 lbs. Hamburger
1 clove Garlic, finely chopped
1 tsp. Salt
1 Tbsp. Water
1 Tbsp. Chili Powder
1 tin Pork ‘n’ Beans, undrained

Tomato Sauce:
3 Tbsp. Oil
2 cloves Garlic, minced
½ cup Onion, chopped
¼ cup Green Pepper, chopped
1 tin (2 lb. 3 oz.) Italian Tomatoes, undrained
1 – 8 oz. tin Tomato Paste
1 Beef Bouillon Cube
¾ cup boiling Water
Dash of Ground Cumin
½ tsp. Salt
1/8 tsp. Pepper

1 cup Cheddar Cheese, grated

Fry hamburger until brown. Add garlic, salt, water and chili powder. Add beans. Remove from heat.

In hot oil in skillet, sauté garlic, onion, and green pepper until tender, about 5 minutes. Remove from heat. Stir in tomatoes and tomato paste. Mix well. Bring to boiling point, stirring over medium heat. Dissolve beef bouillon cube in boiling water. Add beef bouillon, cumin, salt and pepper to the tomato mixture. Simmer, uncovered, and stir occasionally, 5 minutes, to thicken slightly.

Place 1/3 cup filling in center of each tortilla. Roll up. Arrange, seam-side down. In a 9 x 13 baking dish. Pour the tomato sauce over all.

Sprinkle grated cheese over top. Bake for 25 minutes (or until bubbly and heated through) at 350oF.

Makes 12 Enchiladas.
