Saskatoon Pie

A couple weeks ago, I made a bunch of Apple & some Saskatoon pies to put into the freezer. So easy when you get last minute company. Just pop one into the oven and it can bake while you're visiting. Makes the house smell wonderful too. :)


Saskatoon Pie

3 cups Saskatoons
3 Tbsp. Tapioca or Flour
¾ cup Sugar
1 tsp. Lemon Juice

Line a pie pan with pastry (Click here for recipe: http://tasteofhomemade.blogspot.com/2010/10/pumpkin-pie.html ). Mix the sugar and tapioca and add to the berries. Pour into pan. Sprinkle with the lemon juice. Cover with top crust, crimp the edges together well and cut two or three vents for the steam to escape. Bake at 425F for 15 minutes, then reduce the heat to 375F and continue baking for about 20 – 25 minutes longer, until the crust is nicely browned.


If you're baking a frozen pie, you don't have to wait until it's thawed. You'll just need to let it bake longer. :)
