Farm in a Pan

This is one of those "recipes" that's not really a recipe. You can't go wrong. Works great with leftover potatoes. I always seem to cook too many potatoes for supper, so it often works out that we have this as a Saturday lunch with all our leftovers from the week before. :)

Farm in a Pan

Potatoes, cut into pieces
Ham (I used sandwich meat here), cut into pieces
Eggs
Salt & Pepper, to taste

Fry potatoes until browned. Sprinkle with a little salt & pepper. Add ham and fry until heated through. Crack eggs into a bowl and mix. Pour eggs into pan and sprinkle with more salt & pepper. Stir and cook until eggs and done. We usually have this with toast and strawberry jam. :) Quick & easy! (and empties out the fridge too) :)
